Rhum Ice-cream with Raisin (Kem Rum và Nho Khô)

Ingredients:
2 fresh yolks
120 ml whipping cream
120ml fresh milk (no sugar)
50g icing sugar
60g raisin
2 tablespoons white rhum
30ml black or yellow rhum
Process:
Step 1: Soak raisins in white rhum in 4- 5 hours or 1 night. Then, pour out rhum, just keep the raisins.

Step 2: Mix yolks and icing until sugar is melted and the mixture turns yellow white.

Step 3: Cook fresh milk and whipping creame until it starts boiling with small heat. Turn off the heat. And then mix it with mixed yolk in step 2.

Step 4: Use wood spoon to stir gently and then pour this mixture into pot again. Cook with small heat and nonstop stirring. After 10 minutes, you can see the mixture is thicker. Turn off the heat and wait to reduce the heat.

Step 5: Add more raisins in step 1 and yellow/ black rhum in. Stir gently. Pour into clean bowl, put into fridge. Each 2 – 3 hours you take it out and use spoon to stir gently. Repeat this step in 2 – 3 times. Finally, put in fridge again and wait 5 – 6 hours before serving.
